This past weekend was a Meal Swap Sunday. So, I thought I'd share my meal with you all. It's very easy and versatile. These measurements are approximate; I didn't actually measure anything. I just add this and that until it looks right.
Taco Pie
Pie Shell
½ pound ground beef
½ can black beans
½ can corn
½ cup shredded cheddar cheese
½ packet of mild taco seasoning
¼ cup mild salsa
Instructions:
Turn oven to 375.
Prick crust fork and bake for 10 -15 min or until lightly browned; remove from oven.
Brown beef, mix in taco seasoning, beans, corn and salsa and heat through.
Turn into pie shell and top with cheese.
Bake 12 to 15 min until cheese is melted and pie is hot.
Top with shredded lettuce, chopped tomatoes, sour cream, avocado, green onions, etc. if desired.
