There are a lot of things I love about summer, and one of them is the fresh fruit, veggies and herbs available from the markets and our gardens and the chance to grill and eat outside. We adore eating meals on our patio, at the beach, at the park or at outdoor concerts at Lake Harriet. My Darling Boys eat Sweet 100s, grape and cherry tomatoes by the bucket full straight from our own tomato plants. I love the convenience of stepping outside my back door to gather fresh herbs for a recipe. Ah, sweet summer....now if I could just get rid of the bugs and spiders.
Here are some of the foods I can't wait to eat this summer:
- Fresh Summer Squash Casserole
- BLT with all ingredients fresh from the Farmer's Market
- Roasted Sweet Corn with Butter
- Spaghetti with Slow-Roasted Cherry Tomatoes, Basil & Parmesan
- Cold Ice Cream on a Hot Day
- Mama Meg’s Strawberry Cake
- Kramarczuk's Brat with Sauerkraut & Onions at Target Field with a Really Cold Beer
- Corn Dog at the MN State Fair ( The only time & place we eat a corn dog)
- Peach Cobbler
- Mixed Berry Crumble
- Ice Cold Watermelon
- New Potatoes with Onions and Green Beans
- BBQ Chicken from the Grill
- Big Red, Juicy Tomatoes and Sweet Basil from my backyard drizzled with Olive Oil & Balsamic Vinegar
- Fresh Pesto
What's on your list? Enjoy the first {unofficial, but in my book "official"} weekend of the summer. Note: Links to recipes will follow. My tech guy is putting Darling 2 down for a nap. Please feel free to share some of your favorite summer recipes. Over and Out...

OMG! If I could get my hands on Mama Meg's Strawberry Cake! I don't know what I love more about it...the taste/flavor or the memories and smile it brings to my face!
